A Day in the Life of a Snappy Woman, Laura Dunlop

In honor of Women’s History Month, we wanted to highlight one our own hardworking ladies! Laura Dunlop is our Senior Corporate Recruiter over here at Snap HQ and one of the snappiest people we’ve ever met. She moved from Ireland to North Carolina in 2014 and then made her way to Austin and Snap Kitchen 3 years ago. Although she misses home, she loves how welcoming and friendly the Austin community is and how much there is to do.. and eat! She’s been nice enough to let us bug her this past week so we can get a glimpse of her daily routine:

6.20am – Wake up, drink water and have a pre-workout snack – banana, nuts or half a mush (favorite flavor: vanilla bean). 

7.00am – 8.15am – Lift weights, mainly focusing on lower body. My favorite exercises are barbell hip thrusts, walking lunges and cable donkey kicks. 

8.30am – Breakfast – eggs, always eggs. My go-to breakfast bowl includes ½ serving of Snap Kitchen sweet potatoes, 1-2 of our breakfast sausage, spinach and 1-2 fried eggs, topped with pico de gallo and avocado. I love a side of berries with it, too. 

9.15am – Arrive in work with a hot cup of coffee and a dash of Califia Farms vanilla creamer. Work, Work, Work.

1pm – LUNCH! My favorite Snap Kitchen lunches are the romesco chicken, chicken piccata and bbq brisket but recently I’ve been obsessed with making this Snaphack: coconut rice, sweet potato, broccolinisalmon and a fried egg. It’s amazing!

3pm – Afternoon snack time! Chocolate Sea Salt RxBar and a kosmic groovy green kombucha. Got to get in those probiotics!

6pm – Head home (one thing I don’t love about Austin… the traffic..)

7pm – Make dinner. I love making homemade burgers with goat cheese and sweet potato fries, but you also can’t go wrong with thai green curry or grilled grilled chicken thighs and veggies.

7pm – 9pm – I try to get out and do something fun at least one weeknight a week! I love board game bars, a good happy hour, or roller skating. 

9pm – No phone after 9pm! My sleep has been so much better since I implemented this.

10.30pm – Instead of scrolling on my phone or surfing the internet I love reading before bed. I’m currently reading Body of Truth by Harriet Brown.

    When do you get to spend time with your kids? Being a new mom, I feel like balancing time with my daughter outside of work has really eaten up my time to prepare and eat healthy foods, as well as work out. Was excited to read your routine when I saw you are also a working mom, but didn’t see that part of your routine. Thanks!
