Hello Snap Kitchen fam!
I’m Rachel Musquiz, chef and owner of Curcuma, a plant-based food trailer in East Austin that’s inspired by the idea that food is medicine.
Three years ago, I opened the windows to Curcuma with a mission to provide “Food with Intention” to our community. I’m excited to now partner with Snap Kitchen to share my recipes and approach to healing through food. All of our recipes are vegan, and free of gluten, dairy, and soy.
My recipe inspiration comes from Ayurveda, an ancient holistic approach that outlines how to use food to find balance within the body. Balance means healthy digestion, and a personalized understanding of your body’s needs for optimal function. In my own kitchen, I used Ayurveda to heal from inflammation and improve gut health. It completely my changed my quality of life!
As we roll out the Snap Kitchen x Curcuma partnership, I’ll also share my journey with you, and help explain how Ayurveda and plant-based eating can support your healthy lifestyle.
Here’s what you have to look forward to on the menu:
Kitchari Bowl – For thousands of years, South Asian cultures have been eating Kitchari to help detox and support strong digestion. A base of fresh vegetables is topped with Ayurvedic-spiced quinoa and lentils, pickled onions and served with a turmeric tahini dressing.
Pecan Taco Salad – This raw vegan option is especially great in the summer, with spiced pecan “meat” (soaked for easier digestion), crunchy jicama cubes, pickled red onions, mixed greens and served with a house-made avocado salsa.
