Kitchari 101

We’ve partnered with Rachel Musquiz of Curcuma, a food trailer in East Austin that draws inspiration from Ayurvedic medicine, to expand our plant-based menu options! We’re so excited to have her Kitchari Bowl and Pecan Taco Salad on our menu. Today, Rachel is sharing her take on what exactly Ayurveda and Kitchari are, and how you can use the two to help find balance within your body.

What is Ayurveda?

Ayurveda is a lifestyle of healthy routines and intuitive eating, developed over 5000 years ago in India. The goal is to find balance within the body. This means healthy digestion and a personalized understanding of your body’s needs for optimal function. When the body is out of balance, discomfort and disease spread.

Ayurveda uses a multi-pronged approach to healing with a primary focus on food, herbs and lifestyle. The first step is to understand your body’s unique constitution (also known as dosha), so you can recognize symptoms of imbalance. The next step is to make adjustments to your diet to counteract the imbalance, which typically means adding more of what your body is lacking.

What is Kitchari?

The word “Kitchari” is sanskrit for “mixture.” Kitchari combines legumes, grains, and gut-supportive spices. For thousands of years, people have been eating Kitchari to help detox and support strong digestion. Snap Kitchen’s Kitchari Bowl has a base mix of quinoa, lentils and spices, topped with fresh vegetables, pickled onions and a turmeric tahini dressing.

What is a seasonal reset?

Our bodies function best when they are clear of impurities, since this allows us to digest food properly and absorb all the nutrients. Even if you regularly eat healthy, toxins may still build up over time. A seasonal reset will cleanse your body, strengthen your digestion, and set the foundation for healthy habits.

What is a Kitchari reset?

A Kitchari reset is comprised of mono-meals, meaning you eat the same food for multiple meals for the duration of the reset. Eating a wide range of ingredients with different digestive requirements can be taxing on your body, so I suggest trying a Kitchari reset to improve digestion.

A Kitchari reset consists of just a simple breakfast of oats and Kitchari as lunch and dinner for 3-5 days. During this reset, you might notice a renewed sense of balance, inner-peace and calm that comes from giving your mind and body a break. Some other benefits you might experience:
